Broccoli Salad

I have had this recipe in my queue to post since December, when I made it for Christmas potluck at work. While it's not the most exciting of side dishes it was delicious enough to share & catalog so I can make it again, especially for a picnic or barbeque.

See you tomorrow by noon for Not So Fat Fridays, for one of my own healthy creations!


5-6 cups broccoli flowerets
1/2 cup red onion, chopped
5-6 strips of bacon, crumbled
1 cup of grated cheddar cheese
1 cup mayonnaise
1/3 cup sugar
2 Tablespoons vinegar

Combine broccoli, onion, bacon & cheese in a large bowl. Mix mayo, sugar & vinegar well. Pour over vegetables & mix well. Refrigerate for 1-3 hours before serving.


{My Thoughts}

Next time I make this I might just cut down on the mayo to 3/4 cup & use light. This is a very tasty dish though & wouldn't change much else about it!

I've made this before and love it but I agree that it needs a bit less mayo.. I've even made it using slaw dressing that comes in a jar.

I have made this and I use plain yogart instead of the mayo..it gives it a nice bite.

Broccoli salad sound SO good, but the points would be a bit frightening, even with light mayo! I will just have to covet your lovely salad for now.

My Aunt makes a very similar recipe for Thanksgiving and I love it! The mayo can overpower, I agree...

That sounds great except for the broccoli. LOL I hate broccoli! I bet I could substitute spinach, though.
Have you tried the Olive Oil Mayonnaise by Kraft? It is SO good and has 50% less fat.
