It's been a great weekend, will recap more tomorrow when I have my pics together. I will say the Kenny Chesney concert was nice but NOT the highlight!!! Saturday was an awesome day as we had a BBQ at our house. Family came over as well as best friend Tammy with her girls. I was very anxious to post this new recipe. Need I say more, LOOK at this picture!!!!
These were ABSOLUTELY FANTASTIC!!!!! Each time I plopped one of these in my mouth I had to say WOW. My ONLY wish is that I had made them myself. Yeah, Tammy brought these. It was her 1st time making these & we were both excited they came out so beautifully. I will surely be making these soon. They're very easy to make, you just need a little time for assembling them.
24 slices white bread
6 tblsp olive oil
8-9 oz fresh mozzarella, cut into 1/4" slices
6 ripe plum tomatoes, cut into 1/4" slices
1 cup fresh basil leaves, plus extra chopped for garnish
Salt & Pepper
2 tblsp fresh flat leaf parsley
Preheat over to 425. Trim crusts from bread & cut each slice into 4 squares. Arrange on baking sheet & brush with oil. Bake 3-5 minutes until pale golden. Remove bread squares. Make 32 stacks, each starting with a square of bread, then a slice of mozzarella, then tomato & basil. Sprinkle with salt & pepper, then repeat, ending with a piece of bread. Push a skewer through each stack & place on baking sheet. Drizzle with remaining oil & bake upright for 10-15 minutes until cheese begins to melt. Garnish with basil & parsley.
{Food for Thought}
You can't tell in the picture but there is a piece of bread in the middle. So, it's like a triple decker but they're still a perfect 2 bite appetizer. If you make these, they will surely become a part of your favorites.

That looks awesome. I just love the combination of tomato, mozzarella and basil. That is what summer is all about to me.
That looks delish. I had to start another site to keep track of all the recipes I want to try!
Any chance I can move in? I just.want. you. to. feed. me. Please? :)
Wow, those are gorgeous! I may have to make them for our party this weekend! Thanks for sharing!
They look fantastic! Glad you had a good weekend, enjoy your extra day off.
Please, do a cookbook. Ask Tammy if this one can go in it. Because I am CONSTANTLY printing out your recipes. This looks to be my favorite of all...and I have plenty of tomatoes in my garden to use. Yum. Oh my head, this is fabulous!
OH! Now those look YUMMY, Stephanie! (Ironically, we also had this chick in front of us that would not sit down and it drove me nuts. I took a picture of her back and was going to post it on my blog as "my view of Kenny" but decided not to-ha!)
Oh.My.Stars. These look incredible... Wow.
Looks like more than an appetizer. They had a smaller version at the benefit using grape tomatoes, small mozzarella balls and basil and with out bread. I think they are both fabulous.
Gorgeous--great idea!!!
And you know what else I like about your recipes? You use tomatoes quite frequently--and I am a tomato lover, deep and sincere!
Blessings!
OMG, those look seriously delicious! I would make those in a heartbeat and eat them just as fast. I'm gonna make em. Thanks!
Sounds like lots of fun and good times. How I wish I ate tomatoes. Wish I had a sample. I'm too lazy to cook that recipe.
Yummers!
This time I was smart. I didn't come by to visit until I had eaten. ;)
This is right up my alley! I think I could eat the entire plate of appetizers myself!! Not a good idea, but I probably could.
Talk about a perfect little skewer! I would eat these until I busted! They look great.
Those look fab! Sounds like a fun weekend!
I am thrilled to find your blog...always looking for new treats! This one especially looks DIVINE!
Another one to add to my next grocery list. It looks delish and pretty easy. I love anything with melted cheese.
This looks amazing!!!
MMM, I love the tomato-mozz-basil combo but add toasted bread and I'm head over heels!
These look absolutely delicious. Especially with home grown fresh tomatoes...so good!! I will be trying this recipe..Thanks..oh and darling family.
Ooh, those look so good! They look big, so thanks for saying they are a 2 bite appetizer, cuz in the photo they look like they are huge! :) Yummy!
