Peach Trifle

This here is one of my most favorite desserts. It's from the Southern Cross Ranch cookbook, a place we stayed at last year in Madison, Georgia for our anniversary. I've made it a few times & it's just delicious!!!! I made it again last night for my place of work's potluck today. It's perfect for Christmas & the holidays to offset all the chocolate that goes 'round.


1 yellow cake, baked in a 9x13 dish
1/2 cup raspberry jam
1/4 cup brandy
2 cups whipping cream, whipped with sugar & vanilla extract added
1 large pkg Instant Vanilla pudding, prepared
1 28oz can sliced peaches, drained

In a large trifle bowl or oval dish, start with a layer of cake. Using a brush, dab some brandy over the cake. Then spread a layer of jam followed by a layer of peaches & then pudding. Repeat & then top with whipped cream. Refrigerate until ready to serve.

My Thoughts:

I like my cake layers a little thinner then how it comes out baked so I slice a little off & use the scraps to fill in some gaps if needed. I don't measure the jam but it comes out to half of a 16oz jar. You don't have to be perfect with the jam since it doesn't spread so easily.

For the whipping cream, I use an electric mixer to beat the cream until peaks form, about 2-3 minutes. FOLD in 1 tsp of vanilla & a bit of sugar for your preferred sweetness. Or you can buy store bought. As for the peaches, I slice them once more since they're still too thick for my liking. But that's personal preference.

Depending on the dish you use for this you may have leftover cake, pudding & cream. Although this is called a trifle dessert I almost prefer making it in a regular dish, more shallow & much wider than a trifle dish. As you can see from the pic, the view isn't all that perfect since I didn't get the jam all the way to the ends. No matter what you do or how you do it, the combined flavors make for a scrumptious dessert!

I LOVE trifle! I have made about a billion different variations, but my favorite is almost exactly like this, but with Cream Sherry. Oh man. I'm pretty sure I need a drool cup just from thinking about this trifle!

Remember Rachel's trifle on Friends? Where the cookbook stuck together and she combined Shepherd's Pie and Trifle? "First there's a layer of ladyfingers, followed by a layer of jam, then beef sauteed with peas and onions..."

Everytime I think of Trifle I think of that episode!!

oooh such southern comfort... and delcious looking at that, y'all. i am a peach fan. hubby's not, but who knows he may be into something like this.

trifle?? I've never heard of such a thing, but ohmygoodness it looks soooo good.

Looks yummy!!! And that is a good idea to offset the chocolate going around. I, myself, have almost devoured a half a bag of Lindt Snowman Truffles. They are only sold this time of the year and I love them!!!

Oh Yum! I just used my trifle dish for the first time a couple of weeks ago.

I made one of those brownie, chocolate pudding, toffee trifles. It was a huge hit.

Hi Stephanie,
I am in sunny south Florida for three weeks, got here this morning and it was a cool 76 degrees! Now on the other hand it is in the 80's and I feel like I am in a sauna!!Off to the Keyes tomorrow!
Your trifle looks indeed peachy and you right sometimes one get get so "chocolatetosed." I am sure everyone at your work cleaned out that bowl!
I said no blogging for a while but who can resist your creamy delight!

The word trifle reminds me of that Friends' episode when Rachel decides to make an English trifle for Thanksgiving but her cookbook pages are stuck together so 1/2 of it IS trifle and the other half is meat pie. Of course, Joey enjoyed it. Funny stuff!!

Looks fantastic! I make a blackberry trifle that sounds very similar. For the cake layers I use pound cake thinly sliced, but I'm going to try your version next time. I love how it's not as fat and calorie laden as many other desserts, but it's just as decadent!

Peaches are my favourite fruit. Peach pie, peach ice cream and now peach triffle.
